Mint Chocolate Truffles

Nourishing, Superfood Treat

These melt-in-your-mouth truffles will be a recipe you will want to make again and again! It’s one of our favorites to make for our Take Back Your Health™ Retreats for a nourishing, gluten-free, yummy treat for our guests!

Ingredients

 

    • ⅔ cup mashed ripe avocado (about 1 ½ avocados)
    • 4 tablespoons maple syrup
    • 10 drops of liquid stevia
    • 6 oz. organic dark chocolate chunks or bar
    • 2 tablespoons unsweetened cocoa powder
    • ½ teaspoon vanilla extract 
    • ⅛ teaspoon fine ground sea salt
    • 3 drops Peppermint Vitality essential oil

 

 

Directions

  1. Chop the chocolate into bite-size pieces and melt over a medium low heat in a double boiler.
  2. While the chocolate is melting, place the ripe avocado into a bowl. Using a fork, mash the avocado into a smooth puree. You can also process the avocado in a food processor.
  3. To the avocado puree, add the melted chocolate and all remaining ingredients. Stir well with a fork or spatula to combine. 
  4. Cover the mixing bowl and refrigerate for 30 minutes to 1 hour max. That is an important step to firm up the batter and make the truffles easy to roll up.
  5. Shape the truffles with your hands. 
  6. Roll each truffle into the coating of your choice : chia seeds, hemp seeds, unsweetened cocoa powder or shredded coconut and place the truffles on a plate covered with parchment paper. Store in the fridge 30 more minutes before eating, the texture will be even better. *
  7. This recipe makes about 20-25 truffles. Store well in the fridge up to 4 days, in an airtight container.

 

*Roll half in coconut flakes and half in cacao powder for a festive look.
